It’s time to take it easy after a week of eating and cooking! I’ve picked easier meals for this week that shy away from the thanksgiving flavors.
For the remainder of 2023, I’m providing free weekly meal plans. Each plan follows the design of my “Stick to Your Budget Checklist” and includes 3 pantry friendly meal options (at least one of which is vegetarian), 3 budget conscious recipes, and assumes 1 leftovers day. There are also 2 breakfast options and a sweet treat to try! I hope you have a great Thanksgiving and enjoy these recipes!
Monday: After a rather glutenous week, let’s try for a pantry friendly, meatless Monday. This chickpea salad is super easy but still full of flavor.
Tuesday: Chicken fajita wraps is an easy meal that tastes as good as, if not better than, takeout.
Wednesday: Try some upgraded ramen noodles! I almost feel bad about the pile of ramen in my pantry on any given day. But really, I shouldn’t, it’s a quick meal that has endless options as far as upgrades. This is a pantry friendly meal at it’s finest.
Thursday: Unstuffed Pepper Skillet! This one is a great roll over for peppers used in the chicken fajita wraps- usually I buy a 3 pack at Aldi. And I have some sausage I purchased on managers special in my freezer, so it’s definitely calling my name!
Friday: Mini Meatloaves feel like a more substantial meal for a Friday night dinner. They will still be quick and take advantage of frozen ground beef and inexpensive potatoes!
Saturday or Sunday: Grab the Turkey Burger Recipe from this post and pick up a bagged salad. This is the perfect Saturday or Sunday night dinner (depending on when you do leftovers, I’m sure there will be plenty!).
For Breakfast: These Apple Oatmeal Muffins are the perfect use of leftover, inexpensive apples, from Thanksgiving. Take advantage of those sales and make some oatmeal apple muffins!
4-Ingredient Protein Granola is another winner for this week. It’s easy to make and provides you energy to get through the day. I like to serve mine over yogurt with some fruit.
For a Sweet Treat: It’s cookie season, so it’s totally ok to start baking. These are what some call Christmas crack, I just call them GOOD!
