Description

Enjoy the delightful taste of autumn with our Cinnamon Apple Oatmeal Muffins, perfect for using those budget-friendly apples. These muffins feature a delicious streusel topping and a hint of cinnamon in every bite.


Ingredients

  • 1 tablespoon of butter (for melting)
  • 1 apple, peeled and chopped
  • 1/4 cup of quick oats
  • 1 tablespoon of brown sugar
  • 1/4 teaspoon of ground cinnamon (for topping)
  • 1 1/2 cups of quick-cooking oats
  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of brown sugar
  • 1 1/2 teaspoons of ground cinnamon
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of milk
  • 1/2 cup of unsweetened applesauce
  • 1/4 cup of vegetable oil
  • 1 teaspoon of vanilla extract
  • 1 large egg

Instructions

  1. Begin by melting 1 tablespoon of butter. Peel and chop one apple.

  2. Prepare the streusel topping by mixing the melted butter with 1/4 cup of quick oats, 1 tablespoon of brown sugar, and 1/4 teaspoon of ground cinnamon. Set it aside.

  3. In a large bowl, combine the dry ingredients: 1 1/2 cups of quick-cooking oats, 1 1/2 cups of all-purpose flour, 1/2 cup of brown sugar, 1 1/2 teaspoons of ground cinnamon, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix well.

  4. In a separate bowl, combine the wet ingredients: 1/2 cup of milk, 1/2 cup of unsweetened applesauce, 1/4 cup of vegetable oil, 1 teaspoon of vanilla extract, and 1 large egg. Mix thoroughly.

  5. Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the chopped apple.

  6. Fill muffin cups (12 in total) three-quarters full with the muffin batter.

  7. Top each muffin with the streusel topping.

  8. Bake at 400 degrees Fahrenheit for approximately 15 minutes or until a toothpick inserted into a muffin comes out clean.

Notes

These Cinnamon Apple Oatmeal Muffins are a wonderful, not overly sweet treat that pairs perfectly with a cup of coffee for breakfast or snack time.
