The Most Amazing and Simple Chickpea Salad!

Chickpea salad is fabulous any time of year but I really like to make it in the summer time. It’s a cool treat and goes great in a sandwich. There are definitely days that I don’t want to fire up the stove because it’s so hot. For this salad, I simply need to reach into the pantry for a can of chickpeas and the fridge for some mayo and a few other pantry ingredients to really get things going.

How to Make Chickpea Salad

This salad is extremely easy to make and so inexpensive. You only need a few ingredients that you likely already have on hand.

Ingredients:

  • 1 can rinsed and drained chickpeas
  • 1/4 cup of mayo
  • 1/4 tsp onion powder
  • 1/4 tsp dried parsley
  • 1/4 tsp salt
  • sprinkle of pepper
  • a squeeze of lemon (optional)

Simply mash the chickpeas slightly with a fork in a medium bowl. Add all the other ingredients and mix well. This recipe can easily be made vegan by using a vegan mayo. I like to keep lemon juice in a squeeze bottle on hand so I can use it when I don’t have fresh lemons. However, fresh lemons are inexpensive and can really elevate a dish so I do recommend keeping them on hand when you can.

How to Serve your Chickpea Salad

This chickpea salad is delicious on it’s own but is also great served on a sandwich, on crackers, or on a bed of lettuce. I am sure there also other great ways to enjoy this cold salad. Feel free to share your own ideas in the comments!

Chickpea Salad Recipe

Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1/4 cup mayo
  • 1/4 tsp onion powder
  • 1/4 tsp dried parsley
  • 1/4 tsp salt
  • 1 sprinkle black pepper
  • 1 squeeze lemon optional

Instructions
 

  • Mash the chickpeas with a fork in a medium bowl.
  • Mix the chickpeas with all the additional ingredients.
  • Refrigerate until ready to use. I recommend serving this on a sandwich like a chicken or egg salad. It's great on crackers too!
