Description

Enjoy a budget-friendly fall favorite with this delicious Sweet Potato Shepherd’s Pie recipe. A comforting blend of seasoned ground beef and creamy mashed sweet potatoes that’s perfect for cozy family dinners.


Ingredients

Units Scale
  • 2 pounds of sweet potatoes (steamed or boiled)
  • 1 pound of ground beef (or your choice of meat)
  • 1 medium onion, chopped
  • 3 medium cloves of garlic, finely minced
  • 1 cup of beef broth (or 1 cup of warm water with 1 beef bouillon cube)
  • 2 teaspoons of cornstarch
  • Mixed vegetables (optional, e.g., carrots, peas)
  • 2 tablespoons of tomato paste
  • 1 tablespoon of Worcestershire sauce
  • Seasonings (e.g., Rosemary, Sage, Salt, Pepper)
  • 1/2 cup of sour cream
  • 2 tablespoons of melted butter
  • 1/2 teaspoon cinnamon

Instructions

  1. Steam or boil sweet potatoes until soft, then remove the skins and mash them with sour cream, cinnamon, and melted butter. Set aside. ( I like to cook them in the instant pot – fill with water and sweet potatoes, cook on high pressure for 3 minutes, quick release and drain)

  2. In a pan, cook ground beef over medium-high heat until fully cooked and no longer pink.

  3. Add chopped onions and cook for about six minutes until they soften.

  4. Optionally, add mixed vegetables, such as carrots and peas, to the mixture.

  5. Stir in minced garlic, tomato paste, Worcestershire sauce, and your choice of seasonings. Cook for about a minute.

  6. Create a cornstarch slurry by mixing cornstarch with warm water. Add the slurry to the mixture to thicken it. Stir well.

  7. Once the mixture thickens (about two to three minutes), remove it from the heat.

  8. In a 9×13-inch baking dish, layer the ground beef mixture at the bottom.

  9. Top the beef mixture with the mashed sweet potatoes, spreading them evenly.

  10. Bake the dish at 425°F (220°C) for about 20 minutes or until the top is lightly golden and the filling is bubbling.

  11. Serve hot and enjoy your homemade Sweet Potato Shepherd’s Pie!

    Can I mash the potatoes without sour cream .. what difference would it make in the recipe … thanks !

      I think sour cream adds a depth of flavor but it wouldn’t ruin the recipe at all! I hope you enjoy it!
