Apple Cinnamon Oatmeal Muffins

Description
Enjoy the delightful taste of autumn with our Cinnamon Apple Oatmeal Muffins, perfect for using those budget-friendly apples. These muffins feature a delicious streusel topping and a hint of cinnamon in every bite.
Ingredients
- 1 tablespoon of butter (for melting)
- 1 apple, peeled and chopped
- 1/4 cup of quick oats
- 1 tablespoon of brown sugar
- 1/4 teaspoon of ground cinnamon (for topping)
- 1 1/2 cups of quick-cooking oats
- 1 1/2 cups of all-purpose flour
- 1/2 cup of brown sugar
- 1 1/2 teaspoons of ground cinnamon
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1/2 cup of milk
- 1/2 cup of unsweetened applesauce
- 1/4 cup of vegetable oil
- 1 teaspoon of vanilla extract
- 1 large egg
Instructions

Begin by melting 1 tablespoon of butter. Peel and chop one apple.

Prepare the streusel topping by mixing the melted butter with 1/4 cup of quick oats, 1 tablespoon of brown sugar, and 1/4 teaspoon of ground cinnamon. Set it aside.

In a large bowl, combine the dry ingredients: 1 1/2 cups of quick-cooking oats, 1 1/2 cups of all-purpose flour, 1/2 cup of brown sugar, 1 1/2 teaspoons of ground cinnamon, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix well.

In a separate bowl, combine the wet ingredients: 1/2 cup of milk, 1/2 cup of unsweetened applesauce, 1/4 cup of vegetable oil, 1 teaspoon of vanilla extract, and 1 large egg. Mix thoroughly.

Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the chopped apple.

Fill muffin cups (12 in total) three-quarters full with the muffin batter.

Top each muffin with the streusel topping.

Bake at 400 degrees Fahrenheit for approximately 15 minutes or until a toothpick inserted into a muffin comes out clean.
