    Description

    Enjoy the bold flavors of buffalo chicken combined with nutritious ingredients like cauliflower, arugula, and carrots in these satisfying buffalo chicken bowls. Perfect for a quick weeknight dinner or meal prep!


    Ingredients

    Scale
    • 16 oz Frozen cauliflower
    • 3 pounds boneless skinless chicken breast, cubed.
    • 4 tablespoons butter
    • 1 1/2 teaspoon garlic powder
    • 1/2 teaspoon smoked paprika
    • 1 teaspoon onion powder
    • 2/3 cup buffalo sauce
    • 1 tablespoon olive oil
    • 3 cups cooked rice -optional
    • 4 cups arugula – or lettuce
    • 4 cups cabbage
    • 4 large carrots grated
    • 8 ounces blue cheese
    • 1/2 cup ranch dressing

    Instructions

    • Preheat oven to 325 degrees.
    • Place the cauliflower on a baking sheet and drizzle with olive oil. Sprinkle with 1/2 a teaspoon of garlic powder, 1/2 a teaspoon smoked paprika and a sprinkle of salt and pepper.
    • Toss to coat and roast for 45 minutes.
    • Melt the butter in a large pan over medium high heat. Add the chicken, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, salt and pepper.
    • Cook 2-3 minutes per side until cooked all the way through.Pour the buffalo sauce over and coat well.
    • Assemble the bowls in the following order: rice, arugulas, cabbage, buffalo chicken, cauliflower, carrots, and blue cheese.
    • When ready to eat, drizzle with ranch dressing and enjoy!
