    Description

    Ingredients

    • 4 eggs
    • 1/4 cup milk
    • 1 cup cottage cheese
    • 1 cup shredded cheddar cheese
    • 1/4 teaspoon salt
    • 2 teaspoons baking powder
    • 1 1/2 cups almond flour
    • 2 cups cooked broccoli
    • 12 oz bacon

    Instructions

    1. Preheat the oven to 400 degrees Fahrenheit.
    2. In a large pan, cook the bacon until crispy.
    3. In a mixing bowl, whisk together eggs, milk, and cottage cheese until well combined.
    4. Add almond flour, baking powder, and salt to the mixture and stir until smooth.
    5. Mix in the cooked broccoli, shredded cheddar cheese, and crumbled bacon.
    6. Grease a muffin tin thoroughly and divide the mixture evenly into 12 portions.
    7. Bake in the preheated oven for 22 minutes or until golden brown.
    8. Allow the muffins to cool for 5 minutes in the tin before transferring them to a wire rack to cool completely or serve warm.
    9. Store the muffins in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
    10. To reheat, defrost in the refrigerator overnight and microwave for 1 minute for a quick snack or breakfast.
