This Strawberry and Goat Cheese Salad captivated my taste buds with its vibrant flavors and delightful combination of ingredients. I’ll never forget the week I practically lived off this salad, savoring each bite and marveling at its simplicity and sophistication.

Recipe: Ingredients:

  • 6 cups salad greens
  • 1/2 pound fresh strawberries
  • 1/3 cup chopped pecans
  • 1/2 cup crumbled goat cheese

For the Dressing:

  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • 1 clove minced garlic
  • 1 tablespoon dijon mustard
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions:

  1. Slice the strawberries into bite-size pieces.
  2. In a small bowl or mason jar, whisk together the balsamic vinegar, olive oil, minced garlic, dijon mustard, sugar, salt, and pepper until emulsified.
  3. Assemble the salad on a large serving platter or in a shallow bowl, layering the salad greens, chopped pecans, sliced strawberries, and crumbled goat cheese.
  4. Chill the salad until ready to serve.
  5. Just before serving, drizzle the dressing evenly over the salad, ensuring each ingredient is lightly coated.

As I reminisce about my college days, I can’t help but smile at the memories of enjoying this salad day after day. Its fresh and invigorating flavors provided the perfect balance to my busy schedule, offering a moment of tranquility amidst the chaos of exams and deadlines. The combination of sweet strawberries, creamy goat cheese, and tangy balsamic dressing never failed to lift my spirits and satisfy my cravings.
