The Jennifer Aniston Salad Recipe That Never Gets Boring

If you’re a Friends fan, you probably know about “The Rachel” haircut. But have you heard of “The Rachel Salad”? This salad became famous as the salad that Jennifer Aniston ate every day on the set of friends. I can’t verify that this is absolutely true and she didn’t change it up every now and then. But, after trying this Jennifer Aniston salad recipe I can see why she may have eaten it every day. It is light and flavorful with just the right amount of everything.

How to Make it

The good news is that the Jennifer Aniston Salad Recipe is easy to make. You can customize it to your own preferences and make it in whatever quantity you desire.

Let’s take a look at how to make it. It may seem like quite a few ingredients but many of these things you may already have on hand. You’ll need red onion, cooked bulgur wheat, mini cucumber, chopped flat-leaf parsley, chopped mint, chopped pistachios, canned chickpeas, a squeeze of lemon juice (I always just keep a bottle in my fridge in case I don’t have fresh on hand), oil, and feta cheese.

This recipe has you soak the red onions in water to take the bite off and it actually works! I’ll be doing this for all my salads from now on!

Pantry Swaps

I consider this to be very pantry friendly because many of the items you might have on hand like canned chickpeas. If you don’t have pistachios, you can always use a different nut. And bulgar wheat can be swapped for wild rice of quinoa. As for cheese, feta isn’t always necessary, you can use a different cheese and even just sprinkle on some parmesan for flavor! And as I always say, you can always swap out fresh herbs, onion, or garlic for dried!

This salad is perfect as a light lunch or side dish. It’s fresh, healthy, and easy to make. While we may never know if Jennifer Aniston really ate this salad every day, it’s still fun to imagine ourselves as Rachel while enjoying this delicious dish. This dish is perfect to bring to a friends house or a potluck and can likely be made with most things you already have on hand!

Whether you’re a Friends fan or not, this Jennifer Aniston Salad Recipe is definitely worth a try. Who knows, it may become your new favorite salad.

This Jennifer Aniston Salad recipe is something you can eat day after day. It's light, and refreshing while also being pretty pantry friendly and inexpensive.

Ingredients
  

  • 1/8 cup red onion minced
  • 1 cup bulgar wheat cooked
  • 1 mini cucumber sliced
  • 1/8 cup parsley chopped
  • 1/8 cup mint chipped
  • 1/8 cup pistachios chopped
  • 1/2 cup chickpeas rinsed and drained
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/4 cup feta cheese or to taste

Instructions
 

  • Soak the red onion slices in cold water to remove the sharpness for about 10 minutes. Drain and set aside.
  • In a mixing bowl, combine the cooked bulgur wheat, chopped mini cucumber, chopped parsley, chopped mint, chopped pistachios, rinsed and drained chickpeas, lemon juice, and extra-virgin olive oil.
  • Season with salt and pepper to taste. Toss the mixture well.
  • Add the crumbled feta cheese on top of the salad and serve!
