This Jennifer Aniston Salad recipe is something you can eat day after day. It's light, and refreshing while also being pretty pantry friendly and inexpensive.
Soak the red onion slices in cold water to remove the sharpness for about 10 minutes. Drain and set aside.
In a mixing bowl, combine the cooked bulgur wheat, chopped mini cucumber, chopped parsley, chopped mint, chopped pistachios, rinsed and drained chickpeas, lemon juice, and extra-virgin olive oil.
Season with salt and pepper to taste. Toss the mixture well.
Add the crumbled feta cheese on top of the salad and serve!
