Description
Enjoy the bold flavors of buffalo chicken combined with nutritious ingredients like cauliflower, arugula, and carrots in these satisfying buffalo chicken bowls. Perfect for a quick weeknight dinner or meal prep!
Ingredients
- 16 oz Frozen cauliflower
- 3 pounds boneless skinless chicken breast, cubed.
- 4 tablespoons butter
- 1 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 teaspoon onion powder
- 2/3 cup buffalo sauce
- 1 tablespoon olive oil
- 3 cups cooked rice -optional
- 4 cups arugula – or lettuce
- 4 cups cabbage
- 4 large carrots grated
- 8 ounces blue cheese
- 1/2 cup ranch dressing
Instructions
- Preheat oven to 325 degrees.
- Place the cauliflower on a baking sheet and drizzle with olive oil. Sprinkle with 1/2 a teaspoon of garlic powder, 1/2 a teaspoon smoked paprika and a sprinkle of salt and pepper.
- Toss to coat and roast for 45 minutes.
- Melt the butter in a large pan over medium high heat. Add the chicken, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, salt and pepper.
- Cook 2-3 minutes per side until cooked all the way through.Pour the buffalo sauce over and coat well.
- Assemble the bowls in the following order: rice, arugulas, cabbage, buffalo chicken, cauliflower, carrots, and blue cheese.
- When ready to eat, drizzle with ranch dressing and enjoy!
