  • 2 cans white beans, drained & rinsed
  • 3 chicken breasts or 2-3 cups canned chicken, drained
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans diced green chilis
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp oregano
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • Dash cayenne pepper
  • 2 cups chicken bone broth
  • 8 oz cream cheese
  • 1/2 cup heavy cream (or more for extra creaminess)
  • 1 bunch cilantro, chopped
  • Toppings: cheddar cheese, jalapeño slices, extra cilantro, or a squeeze of lime

Instructions

  1. Add beans, chicken, corn, onion, garlic, green chilis, spices, and broth to crock pot. Stir.

  2. Cook on high 3 hours (low 6 hours).

  3. Remove chicken, shred, return to pot.

  4. Stir in cream cheese and heavy cream. Cook 30 min until smooth.

  5. Add cilantro, stir, and serve with toppings.
