Description

This creamy, flavorful Marry Me Chicken is made even easier in the slow cooker. Tender, juicy chicken is seared for extra flavor, then slow-cooked with sundried tomatoes, Italian seasonings, and a rich creamy sauce. Throw in some pasta at the end for a complete meal ready when you are!

  • 2 large chicken breasts, diced
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 cups chicken broth (or bone broth)
  • 3 tbsp cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 cup sundried tomatoes
  • 1 cup ditalini pasta (or orzo)
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Sear the Chicken: Season the diced chicken breasts with salt, pepper, garlic powder, and onion powder. In a large pan over medium-high heat, sear the chicken on all sides until golden brown (about 4-5 minutes). Set aside.

  2. Prepare the Sauce: In the bottom of your slow cooker, whisk together the chicken broth and cornstarch to create a slurry. Then mix in the heavy cream, minced garlic, Italian seasoning, salt, pepper, and paprika.

  3. Slow Cook: Place the seared chicken into the slow cooker, followed by the sundried tomatoes on top. Cover and cook on high for 2 hours or low for 4-6 hours, until the chicken is fully cooked through.

  4. Add Pasta: About 30 minutes before serving, stir in the ditalini pasta (or orzo) and let it cook until tender.

  5. Finish with Parmesan: Stir in the shredded Parmesan cheese just before serving, allowing it to melt into the creamy sauce.

  6. Serve & Enjoy: Once the pasta is cooked and the cheese is melted, serve your creamy Marry Me Chicken and enjoy the rich flavors with minimal effort!
