I Tried a New Way Of Cooking This Instant Pot Lasagna Soup Recipe!

This Instant Pot Lasagna Soup Recipe had me using the soup setting on the instant pot for the first time, and I’m not mad!

Mastering Instant Pot Lasagna Soup, Tips and Tricks for the Perfect Bowl:

  1. Choosing the Right Pasta: While the recipe suggests using cavatappi pasta, you can get creative with your choice. Rotini, fusilli, or even broken lasagna noodles work well.
  2. Seasoning and Spice: Adjust the amount of crushed red pepper flakes to suit your spice preference. For a milder soup, reduce the quantity or omit them altogether. Taste and adjust the seasoning at the end. Depending on your sausage and tomato brands, you might need to add a pinch more salt or Italian seasoning for the perfect balance.
  3. Serving Suggestions: Lasagna soup is fantastic on its own, but it’s also great with a side of garlic bread, cheesy breadsticks, or a simple green salad. Garnish with fresh basil leaves or chopped parsley for a burst of color and freshness.

Description

Fall in love with the rich flavors of Lasagna Soup. This budget-friendly recipe with sweet Italian sausage and a cheesy topping will warm your heart and satisfy your cravings for the perfect fall meal.


Ingredients

  • 1 pound sweet Italian sausage, casings removed
  • 1 onion, chopped
  • 4 cloves garlic, minced (or 2 tsp garlic powder)
  • 2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp crushed red pepper flakes (adjust to taste)
  • 3 tbsp tomato paste
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 6 cups chicken broth
  • 2 bay leaves
  • 8 oz ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 8 oz pasta (cavatappi, rotini, or your choice)

Instructions

  1. Set your Instant Pot to the sauté function and add a couple of tablespoons of olive oil.
  2. Add the sweet Italian sausage (casings removed) and cook, breaking it up as it browns.
  3. Stir in the chopped onion, minced garlic (or garlic powder), dried oregano, salt, pepper, and crushed red pepper flakes. Cook for about 3 minutes until the sausage is fully browned.
  4. Stir in the tomato paste and cook for an additional 2 minutes, scraping the bottom of the pot to ensure nothing is stuck.
  5. Add the fire-roasted diced tomatoes, chicken broth, and bay leaves. Stir well.
  6. Lock the Instant Pot lid, set it to the soup setting, and cook for 15 minutes.
  7. While the soup is cooking, mix ricotta cheese, grated Parmesan cheese, and 1/4 tsp salt in a bowl.
  8. After the soup cycle completes, carefully release the pressure, and remove the bay leaves.
  9. Add the pasta of your choice (e.g., cavatappi or rotini). Lock the Instant Pot lid again and set it to the soup setting for an additional 8 minutes.
  10. Once the pasta is cooked, serve the soup hot. Top each bowl with a generous dollop of the cheese mixture.
  11. Enjoy your delicious Instant Pot Lasagna Soup!

Notes

Be cautious when releasing pressure from the Instant Pot, and follow safety guidelines as per the manufacturer’s instructions.
