When feeding a large family on a budget, finding filling and affordable recipes can be a challenge. However, there is one outstanding dish that ticks both boxes: Hamburger Potato Casserole. Claudette from Texas created one of the best versions of this. She submitted her mouthwatering recipe to my YouTube channel called “Meals With Maria,” perfect for my video “Subscribers Shared These New Budget Meal Ideas! Family Meal Ideas.” It’s the perfect marriage of a potato casserole recipe and a ground beef casserole. It’s also topped off with shredded cheddar cheese.

Claudette’s easy casserole recipe calls for simple pantry staples and ingredients such as lean ground beef, ground turkey, onions, green beans, tomato soup, and instant mashed potatoes. She created this recipe as her children grew older and often brought friends over for dinner. As a result, she needed a filling, healthy, and inexpensive meal to satisfy everyone.

How to Make Hamburger Potato Casserole

To make this delicious casserole, start by browning 1/2 pound of ground beef, 1/2 pound of ground turkey, and one chopped onion in a large skillet over medium heat. Add one can of green beans and one can of condensed tomato soup. Combine everything well.

Prepare instant mashed potatoes according to package instructions. Spread the beef and turkey mixture into a 9×13 inch baking dish or casserole dish, then spread the mashed potato mixture over. Bake at 375 degrees Fahrenheit for 25-30 minutes or until the casserole is hot and bubbly.

Hamburger Potato Casserole is not only delicious but also a great way to get a balanced meal on the table without spending a lot of money. The ground beef and cheddar cheese provides protein, while the green beans and onions add vitamins and minerals. The instant mashed potatoes add carbs to make the dish complete.

So Give It A Try!

If you’re looking for a hearty and filling meal that won’t break the bank, try Claudette’s Hamburger Potato Casserole. You can easily customize the recipe to suit your tastes. Add your favorite shredded cheese on top for extra flavor or swap out the green beans for another vegetable like corn or peas. If you have Yukon gold potatoes or russet potatoes on hand you can make your own mashed potatoes.

This Hamburger Potato Casserole is a delicious and affordable meal that’s perfect for feeding a large family. It’s also the ultimate comfort food. Claudette’s recipe is a great example of how simple pantry staples can be combined to create a satisfying and healthy meal that everyone will love.
