If you have fresh veggies, definitely use them in this gazpacho recipe! But in a pinch grabbing cans can be an inexpensive and pantry friendly alternative!
I originally made this gazpacho recipe on a Dollar Tree challenge. So, if you can believe it, this soup is made entirely from items from Dollar Tree! This makes this soup very inexpensive and because there were no fresh ingredients, it’s really pantry friendly. This is a great soup to make in the summer when you want to avoid using the stove. You’ll only need a food processor or blender to make it and I promise you won’t be disappointed.
How to Make Delicious This Gazpacho Recipe
As I mentioned before, you can use canned ingredients to make this. But in the summer, it’s likely you can get your hands on some really fresh tomatoes and peppers for cheap. While I love a pantry friendly meal, nothing beats fresh veggies so use them, if you can!
Ingredients:
- 1 jar of drained roasted red peppers (or 1 fresh bell pepper)
- 2 cans of diced tomatoes (or 2lbs of fresh tomatoes)
- 1 tsp of minced garlic
- 1 tsp of cider vinegar or red wine vinegar
- 1/3 cup of oil
- salt and pepper to taste
- dried basil or fresh
- store bought croutons or cubed crusty bread
To make this gazpacho recipe, add the first 5 ingredients to a blender or food processor. I like to use my Nurtibullet for things like this. I’ve had it for almost 10 years and it’s good as new! Process until smooth. Chill in the fridge for a few hours and serve topped with croutons, a drizzle of oil and a sprinkle of dried or fresh basil.
This soup is a real treat and something I look forward to enjoying every summer! It’s a great no-cook option for those hot days that does not disappoint!

Summer Gazpacho Recipe
Ingredients
- 1 jar roasted red peppers drained and rinsed or one fresh bell pepper
- 2 cans diced tomatoes or 2lbs fresh
- 1 tsp minced garlic
- 1/3 cup oil extra virgin, if you have it
- salt and pepper to taste
- 1 sprinkle dried basil or fresh
- croutons store bought or fresh
Instructions
- Combine the first 5 ingredients in a blender or food processor.
- Process until smooth and adjust for flavoring by adding salt and pepper or more vinegar if you feel necesary. Refrigerate for at least 2 hours.
- Serve cold, topped with croutons, a sprinkle of basil and a drizzle of oil.
