Welcome to our family friendly meal plan! As a household of two parents and three growing boys, meal planning isn’t just helpful; it’s essential! I’ve tailored this plan to accommodate the needs of a family of five, drawing from personal experience. Meal planning is a cornerstone of our routine for three key reasons.

Each weekly meal plan includes dinners for 6 out of 7 days (one day is for leftovers) and 2 breakfast options and a sweet treat to try. I don’t include a lot of breakfast and lunch options because we rely heavily one “One Month in One Day Meal Prep For Busy Parents” method and I prep all of those once a month! Monday: Chicken and Corn Chowder and if you’re feeling a little extra, make up some homemade bread to go with it!
Tuesday: Slow Cooker BBQ Chicken Tacos
Wednesday: Shrimp Rolls
Thursday: Orange Beef Lettuce Wraps
Friday: Cheeseburger Bombs
Saturday/Sunday (pick one day for leftovers): It’s Mother’s Day weekend! So check out these Mother’s Day Brunch Ideas!
Breakfast Options: Protein Eggs with Cottage Cheese and/or Eggs Benedict Casserole
Dessert: Oatmeal Cookie Bars
Monday: It’s been a little rainy around here but I’m not feeling a hearty soup. I consider this Chicken and Corn Chowder to be a spring and summer soup. And BONUS you can make it with canned chicken!
Tuesday: These BBQ Chicken tacos are brand new to the blog and worth the try! You start the chicken in the slow cooker and finish them off by crisping them up in the oven. You’ll be in awe!
Wednesday: These shrimp rolls are super refreshing and surprisingly budget friendly! I utilized salad shrimp which are much cheaper but also just perfect for a hot dog roll like this!
Thursday: If you made the Orange Chicken last week, you might have some leftover marmalade! These Orange Beef lettuce wraps are not only delicious but a great way to use up that marmalade. And if you didn’t already make Orange Chicken, you can make these this week and Orange Chicken next to use up the rest of your marmalade!

Friday: These Cheeseburger Bombs are a super easy and fun twist on a traditional cheeseburger!
Saturday or Sunday (one night is leftovers): Mother’s Day is Sunday so feel free to pick and choose from my Mother’s Day brunch menu! I’m hosting so we will be going out Saturday night. This will give me a break and not dirty the house!
For Breakfast:
Utilize eggs and cottage cheese to make a creamy protein packed scrambled egg!
I had to add this Eggs Benedict Casserole as a Mother’s Day treat! Although its not on my Mother’s Day brunch menu, it could be on yours!
