Easy Crock Pot Corn Casserole Recipe (Our Family Favorite)

Jump to Recipe·Print Recipe·5 from 1 review

Thanksgiving traditions are sacred, and in my family, Jiffy Corn Casserole is non-negotiable. This year, I decided to shake things up a bit and try the Jiffy Corn Casserole but make it a Crock Pot Corn Casserole Recipe instead. Spoiler alert: it’s a game-changer. Join me as we dive into the simplicity of this corny masterpiece that’s destined to become your new Thanksgiving favorite.

What You Need to Make This Goodness

Let’s keep it real – one egg, a cup of sour cream, a box of Jiffy corn muffin mix (or same amount of its gluten-free sidekick Krusteaz for our gluten-conscious friends), a can of creamed corn, a drained can of corn, and the pièce de résistance – a stick of melted butter. Because, hey, calories don’t count on Thanksgiving, right? (or basically anytime you eat this casserole…)

To Make it Gluten Free

I have gluten free family members so, fear not. I’ve tried this with gluten-free corn muffin mix, and it’s a win. Just measure out the same amount of Krusteaz brand gluten free corn muffin mix as the Jiffy box, and you’re in business. Now, everyone gets to enjoy the buttery goodness.

How to Make It

uncooked 5 ingredient corn casserole

In a bowl, mix, pour, and let the slow cooker do its thing. The greased pot ensures that this golden concoction doesn’t stick, allowing you to savor every bit of buttery goodness. Set it on low for 3.5 hours – the magic time for the flavors to meld and create a corn casserole that’s as good, if not better, than its oven-baked counterpart.

I Get it, There’s an Elephant in the Room

Now, let’s address the elephant in the room – the stick of butter. Yes, this casserole may not win any health awards, but hey, it’s Thanksgiving. Calories take a vacation, right? Embrace the indulgence, savor the flavor, and worry about the gym tomorrow.

The Convenience of the Slow Cooker

In a world where time is precious, the slow cooker comes to the rescue. This recipe lets you set the stage and forget about it until the aroma of cornbread mix, butter, and savory goodness fills your kitchen.

slow cooker

If you’re new to the slow cooker, or looking for a new one, this is the one that I know, love, and recommend. It’s treated me well through the years, travels well, and has automatic shut off/timer.

Yes, It’s Addicting

If you’ve never experienced the addictive joy of Jiffy corn casserole, now’s the time. It’s a crowd-pleaser, and this slow cooker version is a stress-free alternative to oven cooking. Trust me; your taste buds will thank you.

This Thanksgiving, break free from the oven shackles and let your slow cooker take the stage with this Crock Pot Corn Casserole Recipe. Gluten-free options, a touch of humor about calories, and a whole lot of buttery goodness – it’s a recipe for holiday happiness that your guests will surely love. Give it a whirl; simplicity has never tasted this good.

I’d plan for 4 just in case but I did 3x the recipe the other day and it cooked perfectly in 4 hours so I think 3.5 hours for 2x should be just fine!

Can you use frozen corn instead or canned corn? Will it make a difference in taste or texture?

Hi Sara, you definitely can but just heat it according to package instructions and cool it down first or just thaw it. I wouldn’t add it frozen as it might affect the cooking time and I haven’t tried hat.

Did you put 3 times the recipe in one crockpot? If so did you increase the time?

It is a pretty soft casserole, you can’t cut it like bread. It’s more like a pudding! Hope you loved it!
