Description

Ingredients
- 4 eggs
- ¼ cup milk
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- ¼ teaspoon salt
- 2 teaspoons baking powder
- 1 ½ cups almond flour
- 2 cups cooked broccoli
- 12 oz bacon
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a large pan, cook the bacon until crispy.
- In a mixing bowl, whisk together eggs, milk, and cottage cheese until well combined.
- Add almond flour, baking powder, and salt to the mixture and stir until smooth.
- Mix in the cooked broccoli, shredded cheddar cheese, and crumbled bacon.
- Grease a muffin tin thoroughly and divide the mixture evenly into 12 portions.
- Bake in the preheated oven for 22 minutes or until golden brown.
- Allow the muffins to cool for 5 minutes in the tin before transferring them to a wire rack to cool completely or serve warm.
- Store the muffins in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
- To reheat, defrost in the refrigerator overnight and microwave for 1 minute for a quick snack or breakfast.
