I have multiple pictures of the healthy cobb salad because I’ve made it multiple times! If it’s too hot out, I might pass on the hard boiled eggs and opt for a rotisserie chicken. But I also love the hard boiled egg in the salad. This is really a make it your own, depending on what you have, make it work for you!
Making the Healthy Cobb Salad With Chicken

This one is perfect for any weeknight and ingredients can easily be swapped in or out depending on what you have on hand.

Here is what I put into my salad:
- Mixed greens (go with your favorite type – iceberg, spinach, or any greens you love)
- 1/2 rotisserie chicken, diced into bite-sized chunks
- Cucumbers, sliced for a refreshing crunch
- Tomatoes, diced to add juicy bursts of flavor
- Red onion, finely chopped to bring a hint of zing
- Creamy avocado, sliced for a touch of indulgence
- Real bacon bits, because let’s face it, bacon makes everything better
- Canned corn, drained and ready to add its natural sweetness

Ingredients
- mixed greens
- 1/2 rotisserie chicken (diced)
- 2 small cucumbers (sliced)
- 1 pint grape tomatoes (sliced in half)
- 1/2 small red onion (diced)
- 1 1/2 avocados (diced) -optional
- 1 small package real bacon bits -optional
- 1 can corn (drained) -optional
- 2 hard boiled eggs, sliced – optional
- 1 package blue cheese crumbles (or cheese of your choice)
- dressing (blue cheese ranch or your favorite!)
Instructions
- Arrange mixed greens on a plate or in a bowl.
- Add diced chicken, sliced cucumbers, diced tomatoes, chopped red onions, avocado slices, blue cheese, bacon bits, corn, and eggs depending on what you have.
- I like to arrange the plate in a rainbow pattern.
- Drizzle on dressing to your liking.
- Gently toss or leave layered and enjoy!
