Easy Mexican Street Corn Pasta Salad You Will Love

This scrumptious Mexican Street Corn Pasta Salad is a crowd pleaser and easy on your wallet! Your friends are sure to ask for the recipe any time you serve this!

If you love Mexican Street Corn, you’re going to love this Mexican Macaroni Salad. Every time I’ve made this my friends and family have asked for the recipe. It’s obvious why this dish is #1 in My Top 10 BBQ Side Dishes list and this has become a staple in the rotation at my sister in-laws. It’s so simple and cheap that you can make it week after week without spending too much time or money. If you’re looking for a staple summer side, or something special to bring to an event, this Mexican Macaroni Salad is sure to do the trick.

How to Make This Mexican Macaroni Salad

For this Mexican Macaroni Salad, you’ll need pasta, of course! I used farfale but you can grab anything you enjoy making pasta salad out of.

Then you need corn. I grabbed some roasted corn in the frozen section at Trader Joes, but you can use any corn you have. Roasted is nice but not 100% necessary so drained canned or any frozen will be a-ok.

For cheese, I recommend cotija or queso fresco but again, if that’s not in your pantry, don’t let it deter you. For this one, the flavor is mostly in the dressing so you could switch the queso out for any shredded cheese or omit it all together.

And the piece de resistance, the dressing. Mix mayo with sour cream or greek yogurt, garlic powder, chili powder, and lime juice. Mix her up and add salt and pepper to taste.

To bring it all together, mix all your ingredients but save some of the dressing on the side.

To the dressing add a tablespoon of water to thin it out. To make this look super pretty, you want to serve it on a platter, drizzle it with the thinned dressing and top with chopped cilantro and more cheese! There is something about serving a salad on a platter that makes it 1,000x more pleasing and delicious.

Description

This pantry friendly recipe will wow all your friends, simple ingredients like pasta, corn, mayo, sour cream, and chili powder make this a stand out salad!


Ingredients

  • 1 lb farfale pasta (or your favorite pasta salad pasta)
  • 1 cup greek yogurt (or sour cream)
  • 1/2 cup mayonaise
  • 2 tsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tbsp lime juice
  • 1 12oz package fire roasted corn (or drained and rinsed canned)
  • 1 cup crumbled cotija cheese
  • salt and pepper (to taste)
  • 3 tbsp chopped cilantro (for ganish)

Instructions

  1. Cook the pasta according to package instructions.
  2. While the pasta is cooking, mix together the yogurt, mayo, oil, spices and lime juice.
  3. Drain, rinse, and cool the pasta and cook the corn according to package instructions.
  4. Once everything has cooled, mix the pasta, corn, and most of the cheese, with most of the dressing, set aside a few tablespoons of dressing to drizzle over the salad at the end.
  5. Thin the remaining dressing with 1 tbsp of water.
  6. Pour the salad on to a platter and drizzle with the remaining dressing. Sprinkle with the remaining cheese and cilantro.
  7. Enjoy with friends!
