What You’ll Need to Make These Mini Pumpkin Cheese Pies

These mini cheese pie appetizers are really inexpensive to make and only require a few ingredients:

  • 8oz block orange sharp cheddar cheese
  • 6 wheat thin crackers or similar
  • 12 triangle shaped pita crackers or similar
  • 3 tablespoons cream cheese

How to Assemble the Pies:

Slice the 8oz block of cheese into 3 thin sheets. Then use the triangle crackers as a guide to cut the cheese into triangles

Use the cream cheese like glue and stick the cheese to the crackers using it. Put the triangle piece on the bottom and half of the wheat thin on the back as a sort of crust.

Fill a piping bag fitted with a really small pastry tip with the remaining cream cheese and dollop a little on each pie to resemble whipped cream.

You don’t need any baking skills or even mixing skills to assemble these mini pies. They are the perfect way to impress a crowd without spending a ton of money or attempting to combine flavors. They are simply cute and everyone loves cheese!!

Instructions

  1. Using a sharp knife, slice the cheese into three equally thick sheets (see photos above for reference).
  2. Using the triangle pita crackers as a guide, slice each cheese sheet into 4 even triangles.
  3. Cut each wheat thin cracker in half.
  4. Spread a small amount of cream cheese on a pita cracker and top with the cheddar triangle. The cream cheese will act as glue. Attach half of a wheat thin to the back of the triangle to form the “pie crust” with a small amount of cream cheese as well. Repeat with each slice of cheesse.
  5. Use a pastry bag with a small pastry tip to pipe the remaining cream cheese on to the little pies to look like whipped cream.
  6. Serve on a platter and enjoy!
