10 Cozy Fall Chicken Recipes for Easy Family Dinners

Once fall gets busy, I need dinner ideas that are warm and comforting but still realistic enough to make on a regular weeknight.

And if your family is anything like mine, chicken is probably showing up on the menu pretty often. The problem is finding chicken recipes that don’t feel like you’re making the same dinner over and over again.

So I pulled together some of my favorite easy fall chicken recipes — the ones that are creamy, cozy, crispy, slow cooked, or just really good.

There’s a little bit of everything here: comforting chicken soups, easy Crock Pot dinners, a sheet pan meal, cheesy casseroles and a couple of really helpful rotisserie chicken shortcuts.

Save this list for those fall nights when you know you have chicken but have absolutely no idea what to do with it.

If Olive Garden chicken gnocchi soup is one of your favorites, making it at home is such a good fall dinner.

You get the creamy broth, tender chicken and pillowy gnocchi without needing to leave the house — which becomes increasingly appealing once it gets dark at approximately 4:30 in the afternoon.

Best for: restaurant copycat lovers and cozy soup nights.

Marry Me Chicken Gnocchi Soup With Frozen Spinach

Soft gnocchi, chicken and vegetables in a creamy broth make this one of those soups that feels like an entire meal in one bowl.

I especially love gnocchi soups once the weather starts cooling down because they’re filling without requiring a bunch of side dishes.

Add a piece of crusty bread and dinner is done.

Best for: soup season and cozy Sunday dinners.

Creamy Chicken Noodle Soup

This creamy chicken noodle soup is made with rotisserie chicken, egg noodles, vegetables, potatoes, bone broth, cream and parmesan.

It has everything I love about classic chicken noodle soup, but the creamy broth makes it feel a little heartier for fall.

And because the chicken is already cooked, it’s still realistic enough to make on a busy weeknight.

Best for: cold nights, leftover rotisserie chicken and easy soup dinners.

Slow Cooker Ritz Chicken

This is the kind of chicken dinner I make when I want something crispy and comforting without doing anything complicated.

Chicken is topped with a buttery Ritz cracker coating and baked until golden and crisp. It’s especially good with mashed potatoes and a simple vegetable on the side.

Best for: picky eaters, easy weeknight dinners and nights when you want comfort food without a lot of work.

Crock Pot Chicken Spaghetti

Creamy chicken spaghetti is pure comfort food, and making it in the Crock Pot makes it even easier.

Chicken, pasta and a creamy cheesy sauce come together into one of those dinners that feels especially good once the weather turns colder.

This is definitely one for the nights when everyone wants something warm and filling.

Best for: family comfort food and busy weeknights.

Chicken legs are also one of my favorite cuts when I’m trying to keep dinner affordable. They stay juicy, have tons of flavor and usually cost much less than boneless chicken breasts.

Best for: budget-friendly dinners and easy cleanup.

Creamy White Chicken Chili

If you love chili but want something different from the usual beef version, white chicken chili is such a good fall dinner.

It’s creamy, hearty and packed with chicken and beans, and it works just as well for a regular weeknight as it does for football Sunday.

This is also a great one to make ahead because chili somehow always seems even better the next day.

Best for: game day, meal prep and chilly fall evenings.

Rotisserie Chicken Enchiladas

Rotisserie chicken is one of my favorite shortcuts when I want a homemade dinner without cooking every single component from scratch.

These green chicken enchiladas turn that shortcut into a full dinner with tortillas, chicken, green enchilada sauce and plenty of cheese.

Add rice, beans or a simple salad and you have dinner without spending the whole evening in the kitchen.

Best for: leftover rotisserie chicken and quick family dinners.

4-Ingredient Slow Cooker Chicken Curry ( Even My Kids Love It!)

The slow cooker earns its counter space again once fall hits.

This curry chicken is warm, flavorful and exactly the kind of dinner I love being able to start earlier in the day and mostly forget about until everyone is hungry.

Serve it over rice and dinner is pretty much done.

Best for: busy afternoons, sports nights and dump-and-go dinners.

How to Choose What Chicken Dinner to Make

If you’re still staring at the list wondering where to start, here’s how I’d narrow it down.

Need something really easy?
Make the sheet pan chicken legs or Ritz chicken.

Need dinner waiting for you later?
Go with the slow cooker curry chicken or Crock Pot chicken spaghetti.

Have a rotisserie chicken to use up?
Make the creamy chicken noodle soup or green chicken enchiladas.

Want pure comfort food?
Neiman Marcus chicken or chicken spaghetti.

Is it officially soup weather?
Creamy chicken noodle soup, white chicken chili or chicken gnocchi soup.

That’s really the point of this list — you don’t need ten new recipes this week. You just need one that solves tonight’s dinner problem.

How to Make Chicken Dinners Easier During the Fall

Fall can be one of the busiest times of year, so I’m a big fan of making dinner easier wherever it actually helps.

Keep a few chicken dinner basics around when you can: frozen chicken, broth, pasta, rice, canned beans, tortillas and a couple of sauces or seasonings your family likes.

Rotisserie chicken is also one of the easiest shortcuts for soups, enchiladas, casseroles and pasta dishes.

And when you’re already cooking chicken, consider making a little extra. Having cooked chicken in the refrigerator can turn tomorrow night’s dinner into something much easier.

What Goes With Chicken for Dinner?

You don’t need elaborate sides.

For most of these fall chicken recipes, I’d keep things simple with:

  • mashed or roasted potatoes
  • rice
  • crusty bread
  • roasted vegetables
  • a simple salad
  • broccoli or green beans
  • biscuits
  • cornbread

Especially on a weeknight, I’d rather make one really good main dish and one easy side than turn dinner into a whole production.
