Sheet Pan Sweet Potato Breakfast Hash

Description
This savory breakfast hash is a perfect fall meal, packed with sweet potatoes, spices, and your choice of sausage. It’s easy to customize and a hearty way to start the day.
Ingredients
• 2 sweet potatoes, peeled and diced
• 1 onion, diced
• 1 tablespoon olive oil
• 1 teaspoon chili powder
• 1 teaspoon smoked paprika
• 1/2 teaspoon cumin
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 package (fully cooked) sweet apple chicken sausage, diced (or substitute with pork sausage)
• 8-10 eggs
Instructions
1. Preheat the oven to 425°F (220°C).
2. In a large bowl, toss the diced sweet potatoes and onions with olive oil, chili powder, smoked paprika, cumin, salt, and black pepper until evenly coated.
3. Add the diced sweet apple chicken sausage to the mixture and stir to combine.
4. Spread the mixture evenly in the bottom of a 9×13-inch baking dish.
5. Bake in the preheated oven for 30 minutes, stirring halfway through.
6. Remove the dish from the oven, and crack 8-10 eggs directly over the sweet potato mixture.
7. Return to the oven and bake for an additional 10-15 minutes, or until the eggs are cooked to your desired doneness.
8. Serve hot, topped with your favorite breakfast condiments like ketchup, hot sauce, or salsa.
