Description

This banana bread is a deliciously moist treat with the natural sweetness of ripe bananas, warm cinnamon, and rich maple syrup. It’s an easy, family-friendly recipe that can be adjusted with optional mix-ins like walnuts or chocolate chips.


Ingredients

  • 4 very ripe bananas, mashed
  • 1/4 cup melted coconut oil (or vegetable oil, melted butter, or applesauce)
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • Optional: 1 cup walnuts or chocolate chips

Instructions

1. Preheat the oven to 350°F (175°C).

2. In a large mixing bowl, mash the bananas until smooth.

3. Add the melted coconut oil (or your choice of oil), maple syrup, vanilla extract, and eggs to the mashed bananas. Mix until well combined.

4. On top of the wet ingredients, add the flour, baking soda, and cinnamon. Gently mix the dry ingredients together before incorporating them into the wet mixture.

5. Stir everything together until just combined. If you’re adding walnuts or chocolate chips, fold them in at this stage.

6. Spray a loaf pan with cooking spray (or use an 8×8 pan if you prefer squares).

7. Pour the batter into the prepared pan and smooth out the top.

8. Bake in the preheated oven for 45-60 minutes, checking after 45 minutes. The banana bread is done when a toothpick inserted into the center comes out clean.

9. Remove the banana bread from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
