Marry Me Chicken Gnocchi Soup With Frozen Spinach (Slow Cooker or Crockpot Recipe)

You know when something smells so good you can’t even wait for it to cool down—you burn your mouth but keep eating anyway? That’s this Marry Me Chicken Gnocchi Soup.

It’s creamy, cozy, and packed with flavor from tender chicken, sun-dried tomatoes, Parmesan, and pillowy gnocchi. My husband and I are completely obsessed with it. And the best part? You can make it in your crockpot or slow cooker with very little hands-on time.

This recipe combines the viral Marry Me Chicken flavors with a hearty soup that’s perfect for weeknights, meal prep, or even entertaining.

Why You’ll Love This Recipe

  • Slow cooker convenience – no babysitting the stove.
  • Budget-friendly – gnocchi and spinach stretch the meal without breaking the bank.
  • Family-approved – creamy, cheesy, and kid-friendly.
  • Flexible – swap heavy cream for half-and-half, use frozen spinach for convenience, or thicken with cornstarch or potato flakes.

Ingredients for Crockpot Marry Me Chicken Soup

  • ½ cup sun-dried tomatoes, packed in oil (drained & sliced)
  • 2 tablespoons olive oil (or oil from sun-dried tomato jar)
  • 1½ cups chopped yellow onion
  • 4 garlic cloves, minced
  • 3 tablespoons tomato paste (freeze leftovers for future use)
  • 4 cups chicken bone broth (or bouillon + water)
  • 1–2 lbs chicken breast or boneless skinless thighs
  • 1½ cups heavy cream (or half and half)
  • 2 teaspoons dried basil (or 4 teaspoons fresh)
  • 2 teaspoons kosher salt
  • 1½ teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ teaspoon crushed red pepper (plus more for garnish)
  • 1 package gnocchi
  • 1 cup frozen spinach (or 3 cups fresh baby spinach)

How to Make Slow Cooker Marry Me Chicken Gnocchi Soup

cooking tomato paste with onions in a grey pan with a wooden spoon to make marry me chicken soup

Step 1: Build the Flavor Base
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add onion and sauté 3–4 minutes until softened. Add garlic and cook 1 minute. Stir in tomato paste and 1 cup broth to deglaze, scraping up browned bits.

Step 2: Add to the Slow Cooker
Transfer the onion mixture to your crockpot. Add chicken, sun-dried tomatoes, remaining broth, heavy cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Stir to combine.

Step 3: Cook the Soup
Cover and cook on low 4–5 hours or high 2–3 hours, until chicken is tender.

Step 4: Finish with Gnocchi & Spinach
Stir in gnocchi and frozen spinach. Cover and cook on high 20–25 minutes, until gnocchi is cooked through. (If using fresh spinach, add it at the end.)

Step 5: Make It Creamy
Remove chicken, shred, and return to the slow cooker.

Step 6: Serve & Garnish
Ladle into bowls, top Parmesan, crushed red pepper, or fresh basil. Serve hot and enjoy!

Storage & Freezing Instructions

  • Fridge: Store leftovers in an airtight container for up to 3–4 days. Reheat gently on the stove or in the microwave, adding a splash of broth or cream if it thickens.
  • Freezer: This soup can be frozen, but gnocchi doesn’t freeze well—it can turn mushy. For best results, freeze the soup without gnocchi for up to 2 months. When reheating, cook fresh gnocchi separately and stir it in right before serving.

Recipe Variations

  • Low-carb option: Swap gnocchi for cauliflower florets or zucchini noodles.
  • Extra protein: Add crispy bacon at the end for smoky flavor.
  • Spicy kick: Increase crushed red pepper or add a pinch of cayenne.
  • Lighter version: Use half-and-half instead of heavy cream.

FAQs

Can I make this on the stovetop instead of the crockpot?
Yes! Simmer on the stove for about 30–35 minutes until the chicken is tender, then follow the same steps for adding gnocchi, spinach, and cheese.

Can I use rotisserie chicken?
Absolutely. Skip the long cooking time—just add the chicken in when you stir in the gnocchi and spinach.

What kind of gnocchi works best?
Shelf-stable, frozen, or fresh gnocchi all work. Just adjust cook time slightly (frozen may take a few extra minutes).

Made on the stove instead of crockpot. It was delicious. Will make again. One suggestion. The recipe is extremely difficult to read in Pinterest. The ingredients have multiple spaces between them, and the recipe keeps jumping back to the top. Just super difficult to maneuver. Be nice if it could be more readable. I realize you can do much about all the add, but they definitely annoy.
