- 3–4 packages of ramen noodles, remove the flavor packet
- 1 tablespoon sesame oil or high heat oil
- 1 diced red pepper
- ½ cup shredded carrots
- 2 cups diced broccoli
- 2 cups diced mushrooms
- 2 sliced scallions
- ½ teaspoon grated giger
- 1 tablespoon minced garlic
- 3 eggs
- Sesame seeds and chili crunch for serving
Instructions
- Mix the sauce and set aside.
- Boil water in a large pot.
- Heat sesame oil in a wok or large pot over high heat.
- Add in the vegetables, ginger, and garlic and stir constantly for 5 minutes until the veggies are cooked.
- Add the ramen noodles to the boiling water and cook for 3 minutes.
- While the noodles are cooking, move the veggies to one side of the pan and add in three eggs, stirring and scrambling them until fully cooked.
- After the eggs are cooked and the 3 minutes are up, drain the noodles and add them directly to the pan with the veggies.
- Add in the sauce and mix well to coat.
- Serve immediately with sesame seeds, soy sauce, chili crunch or any other toppings you desire!
