Hey there, fellow budget cooking enthusiasts! I hope everyone’s staying healthy. My little ones have been under the weather lately, it’s been quite the whirlwind keeping up. But as they rest, I enjoy spending time cooking and baking. With the weather getting warmer, I’m excited to dust off the grill this week! Join me in embracing the spring vibes and savoring the tasty treats on this March meal plan. Let’s dive in and make some magic happen in the kitchen!
Monday: Kick off your week with tasty Turkey Burgers—a perfect start to grilling season! Check out my $30 Aldi meal plan from last year for more delicious recipes. Grab the shopping list and recipes here and get cooking! Don’t fret if you don’t have an Aldi nearby; this meal plan is budget-friendly at any grocery store, including Walmart!
Tuesday: For meal 2 from the Aldi Meal Plan, try these Grilled Chicken thighs with rice and broccoli. You can get all of the recipes in this post!
Wednesday: I wanted to have a little more chili before it was too warm out. This Panera Bread copycat is the perfect springy-style chili made with turkey!
Thursday: The 3rd meal from my $30 Aldi meal plan is this delicious slow cooker SantaFe Chicken. It’s super easy to dump and go and tastes delicious in a Chipotle style burrito bowl!
Friday: These mini meatloaves have really blown up on Instagram and Tiktok! I like them because they cook quicker and still taste just as delicious as a larger meat loaf. I’m all about getting things on the table as quickly as possible.
Saturday or Sunday (one night is leftovers): If you have stew beef or chuck roast in the freezer, this Mexican Shredded Beef is the most delicious use of it! There is so much flavor in this beef! I love to serve it up in a taco but it’s also good over rice or in a burrito.
For Breakfast:
This Hash Brown Casserole is new to the blog and deserves some love! While it’s worthy of your holiday table, it’s also a great weekend treat or make ahead dish for the week!
I feel like no matter how many of these Egg Bites I make, and even freeze so we’re “ahead,” it’s never enough! They go so quickly around here because they are more than just a great breakfast! We grab them anytime of day for a high protein snack!
For a Sweet Treat: These delicious Spring magic bars are new to the blog as well. Just layer and bake! They are super easy and so satisfying!
I hope you have the most magnificent week and eat well for less!
