Thursday: The 3rd meal from my $30 Aldi meal plan is this delicious slow cooker SantaFe Chicken. It’s super easy to dump and go and tastes delicious in a Chipotle style burrito bowl!

Friday: These mini meatloaves have really blown up on Instagram and Tiktok! I like them because they cook quicker and still taste just as delicious as a larger meat loaf. I’m all about getting things on the table as quickly as possible.

Saturday or Sunday (one night is leftovers): If you have stew beef or chuck roast in the freezer, this Mexican Shredded Beef is the most delicious use of it! There is so much flavor in this beef! I love to serve it up in a taco but it’s also good over rice or in a burrito.

      For Breakfast:

This Hash Brown Casserole is new to the blog and deserves some love! While it’s worthy of your holiday table, it’s also a great weekend treat or make ahead dish for the week!

bacon, egg, and cheese egg bites in a glass Tupperware

I feel like no matter how many of these Egg Bites I make, and even freeze so we’re “ahead,” it’s never enough! They go so quickly around here because they are more than just a great breakfast! We grab them anytime of day for a high protein snack!
