Description

Indulge in the delightful flavors of our Chicken Spaghetti Casserole – a creamy, cheesy, and comforting dish that’s simple to prepare. This savory casserole combines tender pasta, succulent chicken, and a rich, homemade sauce with a hint of heat from diced tomatoes and green chilies. It’s a satisfying family meal that’s budget-friendly and perfect for busy weeknights. Give it a try and enjoy a cozy, homemade dinner that everyone will love.

  • 8 oz pasta (of your choice)
  • 4 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 3/4 cup milk
  • 4 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1 can (14 oz) diced tomatoes with green chilies (or use fire-roasted tomatoes and canned green chilies as a substitute)
  • 1 cup cooked chicken, diced
  • 1 cup mozzarella cheese, shredded (for topping)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.

  2. In a large saucepan over medium-low heat, melt the butter. Add the diced onion and cook until softened, about 4-5 minutes.

  3. Stir in the minced garlic and cook for an additional minute until fragrant.

  4. Add the flour to create a roux, coating the onions and garlic evenly.

  5. Gradually pour in the chicken broth while stirring constantly until the sauce thickens.

  6. Pour in the milk and continue to stir until the sauce is well combined and thickened.

  7. Add the softened cream cheese and cheddar cheese, stirring until fully incorporated into the sauce.

  8. Mix in the diced tomatoes with green chilies (or your substitute) and the cooked diced chicken. Season with salt and pepper to taste.

  9. Fold in the cooked pasta, ensuring it’s well coated with the creamy sauce.

  10. Transfer the mixture to a 13×9-inch baking dish.

  11. Sprinkle mozzarella cheese on top.

  12. Cover the dish with foil and refrigerate until ready to bake.

  13. Preheat your oven to 350°F (175°C).

  14. Bake the casserole for approximately 35 minutes or until heated through and the cheese is bubbly.
