Description

Elevate your lunch with our Mediterranean Chopped Salad, a delicious way to use up leftover marinated chicken and salad greens. Packed with vibrant veggies, feta cheese, and sunflower seeds, it’s a healthy and satisfying meal.


Ingredients

  • 1 Leftover marinated chicken breast
  • 2 cups Salad greens (leftover or fresh)
  • 1/2 Cucumber
  • 1/4 cup Grape tomatoes
  • 1/4 cup Feta cheese
  • 1/8 cup Sunflower seeds
  • 2 tablespoons Your favorite vinaigrette dressing
  • Optional: Pepperoncini, spicy peppers, or slivered red onion

  1. Begin by preparing your ingredients. Slice the cucumber, halve the grape tomatoes, and dice the grilled chicken.

  2. In a salad bowl, combine the salad greens, cucumber, grape tomatoes, diced chicken, and any optional ingredients like pepperoncini, spicy peppers, or slivered red onion.

  3. Add about a quarter cup of feta cheese and slightly less than a quarter cup of sunflower seeds to the salad.

  4. Toss all the ingredients together to create a colorful and flavorful Mediterranean Chopped Salad.
