Make the most out of leftover chicken with this budget-friendly and healthy chicken sweet potato skillet recipe. Plan ahead and prep your meals to avoid the temptation of ordering fast food during busy weeks.

  • Leftover chicken (about 2 cups)
  • 1 sweet potato, chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 cups of tomatoes, chopped
  • 1 cup of salsa
  • 1 can of black beans, drained
  • 1 cup of chicken broth
  • 1 cup of cooked rice (or rice packet)
  • Cooking oil (1-2 tablespoons)
  • Sour cream and cheddar cheese for serving (optional)

  1. In a large skillet over medium-high heat, add 1-2 tablespoons of cooking oil.

  2. Add chopped sweet potatoes and onions. Cook until lightly browned, about 5-8 minutes.

  4. Stir in tomatoes, cooked chicken, salsa, black beans, and chicken broth. Mix everything together.
