  • 1 sweet potato, chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 cups of tomatoes, chopped
  • 1 cup of salsa
  • 1 can of black beans, drained
  • 1 cup of chicken broth
  • 1 cup of cooked rice (or rice packet)
  • Cooking oil (1-2 tablespoons)
  • Sour cream and cheddar cheese for serving (optional)
