Description

This air fried artichoke salad is a perfect way to cook up canned artichokes to make them absolutely delicious!


Ingredients

Units Scale

For the Fried Artichokes:

  • 2 cans artichoke hearts (quartered and drained)
  • 1 teaspoon garlic powder
  • 1 tablespoon oil
  • 1/4 teaspoon black pepper

For the Dressing:

  • 1 shallot (minced)
  • 1 lemon (juiced)
  • 1/2 teaspoon dried parlsey
  • 1 tablespoon dijon mustard
  • 1/4 cup sesame oil

Salad Ingredients:

  • 2 cups mixed greens
  • 1/2 cup sliced celery
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Mix the artichoke hearts, garlic powder, oil, and pepper in a medium bowl and air fry for 15 minutes and flipping half way through.
  2. While the artichoke hearts are cooking mix the dressing ingredients together in a small bowl or cup measure.
  3. To assemble the salad place the greens down on a shallow bowl and top with celery and cooled artichoke hearts. Drizzle with the dressing and sprinkle on the parmesan cheese.

Notes

This salad also tastes great with shaved Brussels sprouts and Canolini beans.
