Ingredients
  

Steak Marinade

  • 1/2 cup olive oil or any oil you have on hand
  • 1 orange juiced
  • 2 tablespoons lime juice fresh or store bought
  • 1/2 packet taco seasoning
  • 2 tablespoons cumin
  • 1/4 cup chopped cilantro
  • 2 lbs Strip steak or chicken breast

Quesadilla Tacos

  • 2 tablespoons butter
  • 8 small tortillas fajita size
  • shredded cheddar cheese or your favorite cheese

Taco Fixings

  • shredded lettuce
  • salsa
  • sour cream
  • shredded cheese
  • cilantro optional

Instructions
 

How to Marinate the Steak:

  • In a Ziploc bag, combine olive oil, orange juice, lime juice, taco seasoning, cumin, and chopped cilantro.
  • Place steaks (or chicken) in the marinade and ensure they are well-coated.
  • Seal the bag and let the meat marinate in the refrigerator for a few hours or overnight.

How to Cook the Steak:

  • Preheat your oven to 400°F (200°C)
  • Take the marinated steaks out of the refrigerator and place them on a baking sheet.
  • Bake the steaks for about 15 minutes or until they reach your desired level of doneness.
  • Once done, remove the steaks from the oven and set them aside.
  • Slice the steak thin once you're ready to assemble the taco.

How to Make the Quesadilla Tacos:

  • In a skillet or pan over medium-low heat, melt the butter.
  • Place one small tortilla in the pan and add a generous amount of shredded cheddar cheese on top.
  • Carefully place another tortilla over the cheese to create a quesadilla sandwich.
  • Allow the cheese to melt and the tortilla to crisp up on one side before flipping it over to cook the other side.

How to Assemble the Tacos:

  • Take a quesadilla shell and fill it with some of the cooked steak.
  • Top the steak with shredded lettuce, salsa, sour cream, shredded cheese, and any other fixings you desire.
