Eggs Over Easy With Scallions, Soy Sauce, and Rice
Adding scallions and soy sauce while cooking is a great addition to this classic budget friendly weeknight meal.

Ingredients

tbsp
oil
(high heat recommended)

eggs

cup
cooked rice
2
tbsp
soy sauce
+ more for serving

scallion
sliced
Instructions
Heat oil over high heat in a pan or wok.
Once the oil is hot and glistening, add the eggs, sprinkle with the scallions, and pour on the soy sauce.
Cover the pan and cook for about 3 minutes until the egg white is cooked but the yolk is still runny (depending on how you like it).
Serve the egg over the cooked rice and top with more soy sauce to your liking.

We like to also top ours with chili crunch.
