Eggs Over Easy With Scallions, Soy Sauce, and Rice

Adding scallions and soy sauce while cooking is a great addition to this classic budget friendly weeknight meal.

Ingredients
  

  • 1 tbsp oil (high heat recommended)
  • 2 eggs
  • 1 cup cooked rice
  • 2 tbsp soy sauce + more for serving
  • 1 scallion sliced

Instructions
 

  • Heat oil over high heat in a pan or wok.
  • Once the oil is hot and glistening, add the eggs, sprinkle with the scallions, and pour on the soy sauce.
  • Cover the pan and cook for about 3 minutes until the egg white is cooked but the yolk is still runny (depending on how you like it).
  • Serve the egg over the cooked rice and top with more soy sauce to your liking.

We like to also top ours with chili crunch.
