Cream Cheese Veggie Roll Ups

These veggie roll ups are the perfect anytime snack or lunch. Make them ahead and eat them all week! Kids and adults love them!

Ingredients
  

  • 6 tortillas
  • 1 red pepper finely chopped
  • 2 scallions sliced
  • 3 oz deli ham or turkey (optional)
  • 1 small cucumber or head of broccoli finely chopped (optional)
  • 8 oz cream cheese softened
  • 2 tbsp ranch dressing
  • 1/2 cup shredded cheddar

Instructions
 

  • Mix cream cheese, ranch dressing, and cheddar cheese.
  • Spread mixture evenly over the tortialls.
  • Top the mixture with the vegetables and meat if you're using it.
  • Roll the tortillas tightly and wrap tightly in plastic wrap.
  • Refrigerate 4-24 hours. Slice into 1/2 inch slices and enjoy!

Notes

Add any vegetables or meats to this that you enjoy and think might taste good!
