I Accidentally Made Vegan Baked Oatmeal and It Was Really Good!

When I decided to put this oatmeal together, I didn’t even realize it would turn out vegan! Turns out, Vegan Baked Oatmeal is absolutely delicious and I’ll never go back! A blend of oats, peanut butter, maple syrup and almond milk make a truly delicious combination for breakfast or an afternoon snack!

Vegan Baked Oatmeal

Description

This oatmeal is a combination of rolled oats and instant oats and that’s what makes it so special. Blueberries and pecans dance together in this delightful treat!


Ingredients

Scale
  • 2 bananas
  • 2 cups unsweetened almond milk
  • 1/2 cup peanut butter
  • 1/2 cup maple syrup
  • 1/2 cup oil or coconut oil
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 cups old fashioned oats
  • 2 cups instant oats
  • 2 cups chopped pecans
  • 2 cups blueberries (fresh or frozen)
  • 4 tablespoons brown sugar
  • 4 tablespoons shredded coconut flakes

Instructions

  1. Preheat oven to 350 degrees
  2. Grease a 11×17 baking pan.
  3. In a large bowl mix banana, almond milk, peanut butter, maple syrup, and oil.
  4. Add the baking powder, cinnamon, and salt and mix again.
  5. Mix in the oats, most of the pecans, and most of the blueberries (reserve some for topping).
  6. Pour mixture into the baking dish. Top with reserved pecans, blueberries, brown sugar, and coconut.
  7. Bake for 50 minutes or until the topping is crisp and the middle is set.
  8. Slice into squares. Serve immediately or freeze up to 3 months. Deforst int he fridge overnight and re-heat in the microwave for one minute for one square.
