Unstuffed Pepper Skillet is a budget-friendly and delicious meal that’s perfect for those days when you’re working with pantry staples and ingredients you already have. With Italian sausage, sweet bell peppers, rice, and tomato soup, this one-pan dish is a flavor-packed, comforting dinner that the whole family will love.

  • 1 onion, diced (or 1 tbsp onion powder)
  • 1 lb sweet Italian sausage
  • 2 red bell peppers, diced (or roasted red peppers)
  • 1 can condensed tomato soup
  • 2 cups cooked rice (any type)
  • Shredded cheese (mozzarella, provolone, or cheddar)
  • Olive oil (for cooking)
  • Salt and pepper (to taste)

Instructions

  1. Heat a large skillet over medium heat.  Add the sweet Italian sausage to the skillet. Break it into small pieces and cook until browned and fully cooked. Drain any excess fat if desired.

  2. Stir in the diced onion and red bell peppers. Cook until the peppers and onions are tender and slightly softened, about 10 minutes.

  3. Pour in the condensed tomato soup and mix well with the sausage and peppers. The soup provides plenty of flavor, so additional spices aren’t necessary.

  4. Add the cooked rice to the skillet. Stir to combine all the ingredients and ensure the rice is warmed through.

  5. Top the skillet with shredded cheese. You can use as much or as little cheese as you like. Cover the skillet and let the cheese melt and become gooey.

  6. Season with salt and pepper to taste.
