This Sweet Potato Black Bean Chili is a Pantry Friendly Recipe You Need To Try!

I make a lot of different chili recipes because chili is one of the most pantry friendly recipes out there! This recipe was born because I didn’t want to go out and buy anything so I used what I had on hand and I was pleasantly surprised. Pantry friendly ingredients like black beans, corn, diced tomatoes, and sweet potatoes come together to make this treat of a meal!

Sweet Potato Black Bean Chili

Description

Try this chili when you’re trying to cut your grocery budget but not the flavor in your meals! It’s a treat you’ll love the taste and price of!


Ingredients

Scale
  • 2 onions
  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 8 cloves minced garlic
  • 4 tablespoons chili powder
  • 8 teaspoons cumin
  • 1/2 teaspoon salt
  • 5 cups water
  • 1 can diced tomatoes
  • 1 can diced tomatoes with green chilis
  • 1 can corn, drained
  • 3 caned drained black beans

Instructions

  1. Dice onions and sweet potatoes into bite sized pieces.
  2. Saute onions and potatoes over medium heat in 2 tablespoons of oil for 4 minutes, stirring. 
  3. Add garlic and seasonings and sautee for about a minute.
  4. Add 5 cups of water and cook for about 12 minutes until the potatoes are tender.
  5. Add diced tomatoes, corn, and black beans to the chili after the potatoes are tender.
  6. Lower the heat to medium low and simmer for another 20 minutes until cooked down.

  • Cook Time: 35
