I make a lot of different chili recipes because chili is one of the most pantry friendly recipes out there! This recipe was born because I didn’t want to go out and buy anything so I used what I had on hand and I was pleasantly surprised. Pantry friendly ingredients like black beans, corn, diced tomatoes, and sweet potatoes come together to make this treat of a meal!

Sweet Potato Black Bean Chili
- Total Time: 45 minutes

Description
Try this chili when you’re trying to cut your grocery budget but not the flavor in your meals! It’s a treat you’ll love the taste and price of!
Ingredients
- 2 onions
- 2 sweet potatoes
- 2 tablespoons olive oil
- 8 cloves minced garlic
- 4 tablespoons chili powder
- 8 teaspoons cumin
- 1/2 teaspoon salt
- 5 cups water
- 1 can diced tomatoes
- 1 can diced tomatoes with green chilis
- 1 can corn, drained
- 3 caned drained black beans
Instructions
- Dice onions and sweet potatoes into bite sized pieces.
- Saute onions and potatoes over medium heat in 2 tablespoons of oil for 4 minutes, stirring.
- Add garlic and seasonings and sautee for about a minute.
- Add 5 cups of water and cook for about 12 minutes until the potatoes are tender.
- Add diced tomatoes, corn, and black beans to the chili after the potatoes are tender.
- Lower the heat to medium low and simmer for another 20 minutes until cooked down.
- Prep Time: 10
- Cook Time: 35
