Ingredients

  • 1 pound of ground beef
  • 1/2 onion, chopped (or 1 tablespoon onion powder)
  • 1 tablespoon season-all salt

  • 1 teaspoon garlic powder (or use taco/fajita seasoning)
  • 1 can (15 oz) corn, drained (or use frozen corn)
  • 1 can (10 oz) diced tomatoes with green chilies (or 1 can diced tomatoes and 1 small can of green chilies, both drained, as an alternative)
  • 1 can (15 oz) black beans, drained (or use cooked black beans)
  • 2 cups cooked rice (brown or white)
  • 1 1/2 cups Taco-style cheese (or your preferred cheese)

Instructions

  1. In a skillet, brown the ground beef and chopped onion. Drain any excess fat.
  2. Season the beef with season-all salt, chili powder, onion powder, and garlic powder. Alternatively, use a taco or fajita seasoning packet if you prefer.
  3. Add drained corn and diced tomatoes with green chilies (or your homemade alternative) to the skillet. Mix the ingredients together.
  4. Stir in the cooked rice. You can use brown or white rice, or even pasta or noodles as an alternative.
  5. Incorporate the drained black beans. Feel free to use canned beans or prepare dried black beans in advance for an economical twist.
