Making the Southwest Rotisserie Chicken Wrap

This one is perfect for any weeknight and ingredients can easily be swapped in or out depending on what you have on hand.

Here is what I put into my wraps:

  • 1/2 rotisserie chicken sliced into bite size pieces
  • 3/4 cup of sour cream (or Greek yogurt for a delightful tang)
  • A touch of salsa to suit your spice preference
  • Juice from half of a freshly-squeezed lime
  • 1 ripe Roma tomato, sliced
  • A quarter of a small, red onion, finely chopped
  • Shredded iceberg lettuce (or your leafy green of choice)
  • Half an avocado, sliced
  • Black beans, drained and rinsed
  • Flour tortillas

Putting it all together:

  1. Begin by mixing the sour cream, salsa, and lime juice.
  2. Spread the sauce generously on to each flour tortilla.
  3. Place rotisserie chicken, tomato slices, red onion, black beans, and avocado on to the tortilla. Make sure not to add too much or your tortilla wont close.
  4. Gently fold the sides of the tortilla and roll it with finesse into a delicious southwest rotisserie chicken wrap.

Ingredients
  

  • 1/2 rotisserie chicken sliced
  • 3/4 cup sour cream or greek yogurt
  • 2 tablespoons salsa
  • 1/2 fresh lime juiced
  • 1 roma tomato sliced
  • 1/4 small red onion finely sliced or minced
  • 1/2 head of iceberg lettuce shredded
  • 1/2 avocado sliced
  • 1 can black beans drained and rinsed
  • 8 small flour tortillas or 4 burrito size tortillas

Instructions
 

  • Mix sour cream, salsa, and lime juice in a bowl.
  • Spread a few tablespoons of sauce on a flour tortilla (you can assemble them all at once or one at a time)
  • Layer shredded chicken, tomato, onion, black beans, and avocado on to the tortilla.
  • Fold tortilla and roll it up tightly.
  • Repeat for additional wraps and enjoy!
