This one is perfect for any weeknight and ingredients can easily be swapped in or out depending on what you have on hand.
Here is what I put into my wraps:
- 1/2 rotisserie chicken sliced into bite size pieces
- 3/4 cup of sour cream (or Greek yogurt for a delightful tang)
- A touch of salsa to suit your spice preference
- Juice from half of a freshly-squeezed lime
- 1 ripe Roma tomato, sliced
- A quarter of a small, red onion, finely chopped
- Shredded iceberg lettuce (or your leafy green of choice)
- Half an avocado, sliced
- Black beans, drained and rinsed
- Flour tortillas
Putting it all together:
- Begin by mixing the sour cream, salsa, and lime juice.
- Spread the sauce generously on to each flour tortilla.
- Place rotisserie chicken, tomato slices, red onion, black beans, and avocado on to the tortilla. Make sure not to add too much or your tortilla wont close.
- Gently fold the sides of the tortilla and roll it with finesse into a delicious southwest rotisserie chicken wrap.
