Veggie Ramen Stir Fry With Egg is the Perfect Way to Make a Veggie Packed Dinner

If you’re anything like me, you probably always have a stash of ramen noodles in your pantry. They’re a lifesaver on busy days when you need a quick and easy meal that your kids will devour without complaints. But did you know that you can take your basic ramen noodles to the next level with just a few simple ingredients? That’s right – today, I’m sharing a new recipe for a delicious and satisfying Ramen Stir Fry with Egg that your whole family will love!

Setting the Scene

Picture this: it’s a hectic weeknight, and you’re scrambling to get dinner on the table before the hunger-induced meltdowns begin. Enter ramen noodles – the unsung hero of busy parents everywhere. With their lightning-fast cooking time and kid-friendly appeal, they’re the perfect canvas for creating a mouthwatering meal in minutes.

Recipe for Ramen Stir Fry With Egg:

To start, gather your ingredients. You’ll need:

  • 3-4 Packages of ramen noodles (discard the seasoning packets)
  • 3 Eggs
  • Your favorite vegetables (think bell peppers, broccoli, carrots, and snap peas)
  • 2 sliced scallions
  • For the Sauce:
  • 2 tablespoons rice vinegar
  • 2  tablespoons sesame oil
  • 4  tablespoons soy sace
  • 4 tablespoons hoisin sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons minced garlic
  • 3 teaspoons minced ginger

Now, let’s get cooking! Chop up your veggies into bite-sized pieces and begin to boil water for the ramen.

In a separate skillet or wok, heat a drizzle of sesame oil over medium-high heat. Once hot, add your chopped veggies to the skillet and stir-fry them until they’re tender-crisp and lightly caramelized.

Place your ramen in your boiling water and cook for 2-3 minutes, until just cooked. Don’t use the seasoning packets.

Next, add the scallions, and push the veggies to one side of the skillet and crack your eggs directly into the empty space. Scramble the eggs until they’re fully cooked, then mix them together with the veggies.

Once the ramen noodles are cooked, drain them and add them directly to the skillet with the veggies and eggs. Pour in your sauce. Give everything a good toss to ensure that the noodles are evenly coated in the sauce.

Description

Celebrate the vibrant flavors of this Ramen Stir Fry With Egg recipe! Tender ramen noodles stir-fried to perfection with wholesome veggies and scrambled eggs, all tossed in a savory soy sauce blend. Quick, easy, and irresistibly delicious – perfect for busy weeknights!


Ingredients

Scale

For the Sauce:

  • 2 tablespoons rice vinegar
  • 2  tablespoons sesame oil
  • 4  tablespoons soy sauce
  • 4 teaspoons hoisin sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons minced garlic
  • 3 teaspoons minced ginger

For the Ramen:

  • 3–4 packages of ramen noodles, remove the flavor packet
  • 1 tablespoon sesame oil or high heat oil
  • 1 diced red pepper
  • ½ cup shredded carrots
  • 2 cups diced broccoli
  • 2 cups diced mushrooms
  • 2 sliced scallions
  • ½ teaspoon grated giger
  • 1 tablespoon minced garlic
  • 3 eggs
  • Sesame seeds and chili crunch for serving

Instructions

  1. Mix the sauce and set aside.
  2. Boil water in a large pot.
  3. Heat sesame oil in a wok or large pot over high heat.
  4. Add in the vegetables, ginger, and garlic and stir constantly for 5 minutes until the veggies are cooked.
  5. Add the ramen noodles to the boiling water and cook for 3 minutes.
  6. While the noodles are cooking, move the veggies to one side of the pan and add in three eggs, stirring and scrambling them until fully cooked.
  7. After the eggs are cooked and the 3 minutes are up, drain the noodles and add them directly to the pan with the veggies.
  8. Add in the sauce and mix well to coat.
  9. Serve immediately with sesame seeds, soy sauce, chili crunch or any other toppings you desire!

Notes

I love to keep a bag of the Trader Joes Chicken Gyoza Potstickers on hand for meals like this! Just microwave and serve, they are my favorite brand and super easy to add to this meal to elevate it.
