How To Make Simple Overnight Blueberry Brioche French Toast Casserole

Wake up to a delicious breakfast with this easy overnight Blueberry Brioche French Toast Casserole. The decadent dish is a great treat for breakfast, brunch, or lunch on a special occasion like Christmas, Easter, or Mother’s Day brunch. The sweet dish takes fluffy bread, soaks it in a rich egg mixture, and lets it sit overnight with blueberries and cream cheese to absorb an outstanding flavor. In the morning, it simply has to cook in the oven and wait to be eaten — it’s that easy to make!

How To Make Overnight Blueberry Brioche French Toast Casserole

INGREDIENTS FOR OVERNIGHT BLUEBERRY Brioche FRENCH TOAST CASSEROLE:

  • 12 eggs
  • 2 cups of milk
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 12 slices of day-old bread (any type is fine, but I recommend brioche or French)
  • 2 8 oz. packages of cream cheese
  • 1 cup blueberries

INGREDIENTS FOR BLUEBERRY SAUCE

  • 1 cup water
  • 1 cup white sugar
  • 2 teaspoons cornstarch
  • 1 cup blueberries
  • 1 tablespoon butter

How To Make Overnight Blueberry Brioche French Toast Casserole

Start by cracking all 12 eggs in a large bowl. It may seem like a lot of eggs, but it makes the casserole nice and rich. After the eggs, mix in the milk, vanilla, and maple syrup. Whisk everything together until fully combined.

Now it’s time for the main focus — the bread! Use a sharp knife to cut the bread into large cubes. Any type of bread is fine, but brioche or French bread will sop up the egg mixture the best. Add half of the bread to the prepared casserole dish, making sure to spread the bread cubes out to cover the bottom of the dish, getting every nook and cranny!

Let’s get into the cream cheese. Cube the blocks of cream cheese into similar sizes of the bread. Then, add the cubes of cream cheese to the casserole dish on top of the bread cubes.

Don’t think we forgot about the blueberries! Spread the fruit all around, and then top the dish with the remaining cubes of bread. Finish the dish by pouring the egg and milk mixture all over the casserole dish. Don’t worry about soaking each piece of bread with the egg mixture, as it will soak it all up as it sits overnight.

Cover the casserole dish with plastic wrap and let it sit in the fridge overnight. This is where the casserole does its magic.

In the morning, take the casserole dish out of the fridge 30 minutes before you want to bake it, and let it sit at room temperature. Bake the casserole in the oven for 30 minutes covered. Then, take the foil off the casserole dish and continue the baking process until the casserole is firm in the center, about 25-30 minutes.

If you didn’t make the blueberry sauce the night before, make it while the casserole is cooking. In a saucepan, combine the water, sugar, and cornstarch. Whisk the mixture together and bring it to a boil. Continue stirring the mixture while it comes to a boil, about 3-4 minutes.

Once the mixture is boiling, reduce the heat to low, add the blueberries, and let them cook for about 10 minutes. When the blueberries start to burst, the sauce is just about ready.

Finish off the sauce with a tablespoon of butter, mixing it in to combine.

Serve the casserole still warm and top it with a nice scoop of the luscious blueberry sauce.

What I Love To Serve With This Blueberry Brioche French Toast Casserole

While this blueberry brioche casserole is basically a meal in itself, you can serve it alongside some classic dishes for an excellent pairing. Next time you make the dish, try serving it with some of these favorites.

  • Eggs Benedict Casserole
  • Homemade Bacon, Egg, and Cheese Bites

Make It Healthier

I’m always looking for new ways to add more fruit and veggies to my dishes. Here are some ideas to add more nutrients to this dish or make it lighter:

  • Swap out the brioche bread for a sprouted, whole-grain variety.
  • Go with light coconut milk instead of typical milk. If you swap out the butter for vegan butter and cream cheese, too, this makes the casserole dairy-free.
  • Use half the bread and double the amount of fruit!
  • Get in some extra protein by swapping out the cream cheese for Greek yogurt.

Make It Kid Friendly

I always recommend you adjust recipes based on what your family likes. If your kids or even other family members are weary of this dish here are some swap recommendations to get them trying new things without serving a completely different dish:

  • If your kids aren’t the biggest blueberry fans, let them replace the berries with their favorite fruit. Strawberries and apples are great substitutions.
  • Offer different toppings, like powdered sugar or whipped cream, if the blueberry sauce feels like an overload.
  • Let your little ones get in on the cooking process in the kitchen and help assemble the casserole. The dish is a great one for little helpers in the kitchen. Plus, they will be more likely to eat the dish if they have a hand in making it.

SWAP IDEAS

  • You can make the dish gluten and dairy-free with a few simple swaps. Use oat, almond, or coconut milk for regular milk, swap out the bread for gluten-free bread, and use margarine or vegan butter and vegan cream cheese.
  • Most berries will swap in nicely in this overnight French toast casserole. Use raspberries, strawberries, blackberries, or a combination of all of them. Apples will make a great swap, too, and come out like soft-baked apples.
  • If you want to make the dish even more decadent, swap out the milk for heavy cream. The addition of the heavy cream makes it rich in the best way possible.

Shopping Tips For Overnight Blueberry Brioche French Toast Casserole

  • If you see brioche bread on clearance next time you are at the market, grab a loaf and place it in your freezer. That way, you’ll save some money and have a loaf ready to go for this recipe.
  • The same goes for cream cheese! The spread can last for two months in the freezer.
  • If you can’t find fresh blueberries or they are super pricey, if it isn’t the season, go with frozen blueberries. Since you are baking the fruit, there won’t be a major difference in the taste if they are fresh versus frozen.

    French Toast Casserole

    • 12 large eggs, beaten
    • 2 cups milk
    • 1 tsp vanilla extract
    • 1/3 cup maple syrup
    • 12 slices day old bread, cut into 1-inch cubes
    • 2 (8 ounces) packages of cream cheese, cut into 1-inch cubes
    • 1 cup fresh blueberries

    Blueberry Sauce

    • 1 cup white sugar
    • 1 cup water
    • 2 tablespoons cornstarch
    • 1 cup fresh blueberries
    • 1 tablespoon butter

    Instructions

    1. Lightly grease a 9×13-inch casserole dish. Set the side.
    2. In a large bowl, whisk eggs, milk, and maple syrup.
    3. Cube the bread into 1-inch pieces and half to the casserole dish. Cube the cream cheese into 1-inch pieces and add on top of the bread, followed by the remaining bread.
    4. Pour the egg mixture over top the bread and cream cheese. Cover the casserole dish with plastic wrap and refrigerate overnight.
    5. Remove the casserole from the refrigerator 30 minutes before cooking. Preheat the oven to 350 degrees.
    6. Bake the casserole in the oven covered for about 30 minutes. Uncover the casserole and continue baking until the center is firm, about 25-30 minutes.
    7. While the casserole is cooking, prepare the blueberry sauce. Mix sugar, water, and cornstarch together in a medium-sized saucepan. Bring the mixture to a boil, stirring constantly about 3-4 minutes. Stir in the blueberries, reduce to low heat and continue to cook until the blueberries burst, about 10 minutes. Stir in the butter and remove from heat.
    8. Pour the sauce over the casserole while still warm and enjoy!
