For the Beef:
- 1 pound ground beef
- 2 cloves of minced garlic
- 2 teaspoons of fresh, grated, ginger root
- 1/4 cup soy sauce
- 2 tablespoons of orange juice
- 1 tablespoon sugar
- 1 tablespoon orange marmalade
- 1/4 teaspoon crushed red pepper flakes
- 2 teaspoons corn starch
- 1/4 cup water
- Large lettuce leaves for serving (like bib)
- 2 cups of cooked white rice
For the Sauce:
- 1/4 cup rice wine vinegar
- 3 tablespoons water
- 3 tablespoons orange marmalade
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 2 cloves minced or grated garlic
- 1 teaspoon sriracha
For Serving:
- Shredded carrots
- Pickled red onions
- Sliced green onions
Instructions
- In a large hot pan, cook beef until fully browned and cooked through.
- Drain the beef.
- Add garlic and ginger and cook for 1 minute until fragrant.
- Mix in soy sauce, orange juice, sugar, marmalade, and red pepper flakes.
- Mix the corn starch and water in a small bowl to make a slurry.
- Add the slurry and cook for 1-2 minutes stirring frequently.
- Mix all the sauce ingredients in a small bowl.
- Serve with rice, beef, sauce and toppings inside the lettuce wraps.
