- 1 can quartered artichokes, drained and chopped
- 10 ounces fresh spinach, sliced (or thawed frozen spinach, with excess water squeezed out)
- 1 onion, diced
- 1 package (8 oz) cream cheese
- 1/2 cup sour cream or Greek yogurt
- 4 teaspoons minced garlic (or 2 teaspoons garlic powder)
- 1 cup shredded mozzarella cheese
- 1/2 cup Parmesan cheese
- Salt and pepper to taste
Instructions
- In a bowl, mix together chopped artichokes, sliced spinach, diced onion, cream cheese, sour cream (or Greek yogurt), minced garlic, mozzarella cheese, Parmesan cheese, salt, and pepper.
- For a richer flavor, you can also add 1 tablespoon of onion powder or 2 tablespoons of dried minced onion.
- Transfer the mixture to a slow cooker.
- Cook on low for 2.5 hours or on high for 1 hour, until the dip is hot and bubbly.
- Stir the dip before serving to ensure a creamy consistency.
- Serve with tortilla chips or your favorite dipping bread.
