Description

These no bake key lime pie cups are creamy, tangy, and perfect for parties, showers, Mother’s Day, picnics, and summer entertaining. Made with graham cracker crumbs, fluffy key lime filling, and whipped cream, they’re easy to make ahead and transport in dessert cups with lids.

For the key lime filling

  • 1 (14-ounce) can sweetened condensed milk
  • 6 tablespoons lime juice

For the whipped cream

  • 1 cup heavy cream, cold
  • 2 tablespoons granulated sugar or confectioners’ sugar
  • 1/2 teaspoon vanilla extract

For assembly

  • 2 sleeves graham crackers, crushed
  • lime zest, for topping
  • 4 lime slices, cut into half moons
  • 8 clear dessert cups


Instructions

  1. Crush the graham crackers in a zip-top bag using a rolling pin until they form fine crumbs.
  2. In a medium bowl, mix together the sweetened condensed milk and lime juice until smooth and blended.
  3. In a separate large bowl, use a hand mixer or stand mixer fitted with a whisk attachment to whip the heavy cream, sugar, and vanilla on medium-high speed until medium peaks form, about 3 to 4 minutes.
  4. Fold 1 cup of the whipped cream into the key lime mixture until smooth and fluffy.
  5. Set out 8 clear dessert cups. Add 1 1/2 tablespoons crushed graham crackers to the bottom of each cup.
  6. Spoon or pipe the key lime filling into each cup until halfway full.
  7. Add another 1 1/2 tablespoons graham cracker crumbs to each cup.
  8. Top with more key lime filling almost to the top.
  9. Transfer the remaining whipped cream to a piping bag or piping tool and pipe a swirl onto each cup.
  10. Sprinkle with a little extra graham cracker crumbs and lime zest, then top each cup with a half slice of fresh lime.
  11. Cover and refrigerate for at least 2 hours before serving.
