I love this Monkey Cinnamon Roll French Toast Bake because it’s the perfect mix of cozy December flavors—rich, buttery, and packed with cinnamon-sugar goodness. It’s easy to make, feels indulgent, and the gooey layers topped with creamy icing make every bite pure holiday magic. Perfect for family mornings or a festive treat!


Ingredients

  • 1 stick (1/2 cup) butter
  • 1/3 cup sugar
  • 2 eggs
  • 3/4 cup heavy whipping cream
  • 3 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 2 containers of cinnamon rolls (preferably the rolled ones with icing included)

Instructions

  1. Melt the stick of butter in a small saucepan.
  2. Stir in the sugar and heat gently until the sugar dissolves into the butter. Set aside.
  3. In a large mixing bowl, whisk together the eggs, heavy whipping cream, cinnamon, nutmeg, and vanilla extract.
  4. Pour in the melted butter and sugar mixture, whisking until smooth.
  5. Open the cinnamon roll containers and cut each roll into four pieces. (Using rolled cinnamon rolls adds extra layers of cinnamon goodness, giving a fun monkey-bread vibe!)
  6. Add the cinnamon roll pieces to the custard mixture, stirring gently to coat all the pieces in the creamy, spiced mixture.
  7. Pour the mixture into a greased 13×9-inch baking dish, spreading it out evenly.
  8. Bake at 350°F (175°C) for 35–40 minutes, or until the casserole is golden and set in the middle.
  9. While still warm, spread the included icing from the cinnamon rolls over the top of the casserole.
