Mini Meatloafs Are The Superior Meatloaf. I Said It!

I know we all love mom’s meatloaf. In fact, over 200 of you commented on Facebook raving about the dish. If you haven’t tried mini meatloafs, now is the time. They take half the time to cook and are obviously super cute!

The Options are Endless With these Sheet Pan Mini Meatloafs!

The excellent thing about sheet pan cooking is that you can add additional items to the pan. When I’m making these mini meatloafs I love to add diced potatoes and broccoli. This makes weeknights super easy since everything is cooking at one time. It also means less dishes!

While I love potatoes and broccoli, you can always switch things up depending on what you have on hand, cauliflower, asparagus, and green beans would all be winners beside this meatloaf.

Save Time and Money Making Mini Meatloafs

I really like making these vs. the big meatloaf we may all be used to because once they go in the oven, it only takes 25 minutes. That’s a huge win in my book! These are perfect for any busy weeknight but make you feel like it’s a special occasion!

Meatloaf is traditionally a budget friendly meal and these are no exception. The entire meal comes in at less than $10 and can be made in less than 45 minutes!

Here’s what I paid in my area:

  • 1lb ground beef – $3.69
  • Stuffing Mix 6oz – $1.79
  • 4 Potatoes – $2.99
  • Fresh Broccoli – $.89
  • Total: $9.36
  • Pantry Items: ketchup, bbq sauce, 2 eggs, olive oil, onion powder, garlic powder, salt, pepper

Kids Love them…or Loaf them?

Yes, my kids Loaf this meatloaf! It’s so easy, low ingredient and maybe you already have everything you need on hand! My kids are down with pretty much anything you can dip in ketchup, and let’s face it, so am I. This comfort dish is one to try asap!

Description

Try this budget-friendly weeknight meal of delicious sheet pan mini meatloafs served with garlic-roasted potatoes and broccoli—a quick and easy family favorite ready in just 25 minutes!


Ingredients

Scale
  • 2 eggs
  • 1 pound ground beef
  • 1 box of stuffing mix
  • 1/2 cup water
  • 1/2 cup tomato ketchup
  • 4 yellow potatoes, diced
  • 1 tablespoon olive oil
  • Garlic powder, onion powder, salt, and pepper to taste
  • Broccoli florets
  • Additional barbecue sauce for brushing

Instructions

  1. Preheat your oven to 425°F (220°C).

  2. In a mixing bowl, combine eggs, ground beef, stuffing mix, water, and tomato ketchup. Mix thoroughly.

  3. Form the mixture into mini meatloaves and place them on a sheet pan lined with parchment paper. Brush each meatloaf with bbq sauce.

  4. In a separate bowl, toss diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.

  5. Spread the seasoned potatoes on the same sheet pan around the mini meatloaves.

  6. Bake in the preheated oven for 25 minutes, or until the meatloaves are cooked through and the potatoes are golden and crispy.

  7. While the meatloaves and potatoes are baking, prepare the broccoli by tossing it with olive oil, salt, pepper, and garlic powder.

  8. After the first 10 minutes of baking, add the seasoned broccoli to the sheet pan, or another pan if you need more room, and bake for an additional 15 minutes.

  9. Serve hot, and enjoy this quick, budget-friendly family dinner!

        On your video you say 1/4 cup of ketchup but your recipe lists 1/2 cup. Can you tell me which is correct? Also, 5 servings means five mini loafs? Thanks! 🙂

          Hi Merry! I’m so glad you pointed that out. I’ll have to put a note in my description of the video. The 1/4 is a mistake. The correct amount is 1/2 cup! I made 7 meatloafs so it ends up being a little over 1 meatloaf per person. I know some people like more and some like less, 1 meatloaf with potatoes and a veggie is more than enough for 1 person so there could be leftovers or those with a larger appetite could have 2! I hope you enjoy them!
