Jump to Recipe·Print Recipe·Leave a Review

So, picture this – amidst the holiday hustle, I find solace in the kitchen, whipping up a bit of magic. My go-to? Mini Cheesecakes with a Nilla Wafer twist. They’re not just desserts; they’re bite-sized parcels of joy, perfect for any festive occasion.

Crafting Holiday Magic

First up, gather your kitchen companions – a friendly block of softened cream cheese, a spoonful of sour cream, a sprinkle of sugar, a drop of vanilla, and the VIP – a lone egg. It’s a humble mix, but trust me, the alchemy it creates is nothing short of enchanting.

Now, let’s talk about the unsung heroes – Nilla Wafers. These golden wonders are the unsung heroes, providing the perfect crunch to complement the creamy cheesecake mixture. It’s a match made in dessert heaven, and the results speak for themselves.

I use this silicone mini muffin tin for mine and they make the perfect bite sized treats!

As these mini marvels dance in the oven, the kitchen transforms into a sweet symphony. In just 15 to 20 minutes, they emerge – not too browned, just right. Ready to be adorned with the pièce de résistance – a crown of vibrant raspberry topping, or if you’re feeling thrifty, a cherry pie filling.

The Magic Finale

But wait, there’s more magic to unfold. A gentle dusting of powdered sugar, and voilà! Each mini cheesecake transforms into a winter wonderland treat, as if it’s just snowed sweetness in my kitchen. It’s the little details that make all the difference.

When to Make Mini Cheesecakes?

Now, let’s talk versatility. These mini cheesecakes aren’t just for show; they’re for savoring. Whether it’s a family gathering, a potluck, or just a personal sweet craving, they fit the bill. And that Nilla Wafer crust? It’s not just a crust; it’s a nostalgic journey with every bite.

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a stand mixer or using a hand mixer, combine the softened cream cheese, sour cream, sugar, vanilla, and egg. Mix until well combined. Don’t worry if there are a few small clumps.

  3. Grease your mini muffin silicone tin. Place a Nilla Wafer at the bottom of each cup, creating the crust for your mini cheesecakes.

  4. Pour the cheesecake mixture into each cup, filling it to the top.

  5. Bake in the preheated oven for 15 to 20 minutes, depending on your oven and the size of your muffin tin. The goal is not to brown the tops but to ensure they are cooked through.

  6. Allow the mini cheesecakes to cool completely.

  7. Top each mini cheesecake with whipped cream and a raspberry or cherry pie filling.

  8. Optionally, create a snowy effect by dusting powdered sugar over the top.

  9. Serve and enjoy these festive and delightful mini cheesecakes!
