Hey there, budget cooking superstars! I’m thrilled to be back with another week of mouthwatering recipes to tantalize your taste buds. Lately, I’ve been on a mission to streamline things in my kitchen – with my kids growing up faster than I can keep track, life seems to be moving at lightning speed! That’s why this week’s meal plan is all about simplicity and ease. Get ready for a lineup of pantry-friendly, budget-friendly, and oh-so-easy recipes that will make those busy days a breeze! Let’s dive in and make life a little tastier and a lot more manageable together!
Monday: These Banh Mi Rice Bowls feel so fancy but they are actually really easy to make! Cook up some meat, slice up veggies, and mix up a quick sauce and you’ve got a restaurant worthy meal right in your own kitchen in 30 minutes!
Tuesday: This Chicken Piccata is super easy because it’s made in the crock pot! But it still brings all the flavor of the stove top meal! Serve it with rice, mashed potatoes, or pasta and a veggie on the side for a complete meal!
Wednesday: This easy cheesy Chicken Broccoli and Rice is a budget classic. You can use fresh chicken or go pantry friendly and grab some canned chicken, it works just as well!
Thursday: This Mexican Fried Rice is an easy go to for my family when trying to eat well quick! Just like the chicken broccoli and rice, you can switch out the fresh chicken for canned or many just grab a rotisserie to split between the two.
Friday: These Poor Mama Cheeseburgers are the perfect alternative to Friday night take out and such a treat!
Saturday or Sunday (one night is leftovers): This weekend is perfect for putting a Mississippi Pot Roast in the slow cooker and cuddling up with a good book while you smell the delectable aroma all day long! You can add potatoes and carrots right to the crock pot or serve it along side some fluffy mashed potatoes!
For Breakfast:
These Cottage Cheese Bowls have got to be my favorite quick breakfast! I recently got a question about the salt free everything bagel seasoning so I’ve linked it here!
Like I said, we’re making things easy and there’s not much easier than these overnight oats!
For a Sweet Treat: Why not try making these Oreo Truffles but use Green Candy Melt to make them festive for St. Partricks day?!
I hope you have the most magnificent week and eat well for less!
